It’s time for a summer favorite:

Fruit Salsa!

Every summer I look forward the many fresh fruits and vegetables available for all kinds of dishes!  Here is an easy summer favorite:

Dice all fruits and veggies small 1/4 inch cubes are ideal.  Try some fo the following, or add your favorites:

1/2 c diced pineapple

1 c diced strawberries

1 c diced peaches

1 diced kiwi

1 orange, cut into small pieces

1/4 c diced bell pepper

2 T finely diced red onion (optional)

1/2 c blueberries

Your favorite fruit!!!

Mix all, chill,  and allow them to marinate in each other’s juices for an hour before serving.

Serve with tortilla chips, or brush your own tortillas in olive oil, dust with cinnamon sugar and crisp in oven for 5 min.

Butternut Quinoa

This may be my favorite quinoa recipe yet! 

It looks and acts a lot like a flavored rice, but has more protein, and a lower glycemic index.

1 T olive oil

1 c butternut squash puree

2/3 c chopped bell pepper

1/3 c finely chopped onion

1 clove garlic, minced

2 stalks celery, diced

1 1/3 c chicken broth

1 c uncooked quinoa

1/2 t salt

Heat oil in a large sauce pan, and add garlic, onion, celery, and pepper.  Saute 4 min and add squash, broth, quinoa, and salt.  Bring to a boil.  Cover and reduce heat.  Simmer 20 minutes or until liquid is absorbed.  Serve hot.

Butternut Custard

Butternut custard got another thumbs up from the family!  In fact, my teens each helped themselves to thirds!

 I haven’t yet perfected gluten-free pie crust, so this custard was a nice alternative to the pumpkin pie I was going to make for Roger on Father’s day.

Ingredients:

2 c cooked and pureed butternut squash

3 eggs

1/2 c sugar, honey, maple syrup or your sweetener

1 t salt

1 c almond, soy, or other milk

1 t cinnamon

1/2 t nutmeg

1/2 t ginger

pumpkin pie spice

Your favorite whipped topping

Mix all ingredients except pumpkin pie spice and whipped topping with beaters for 2 min.  Fill custard cups 1/2 full, sprinkle with pumpkin pie spice, and bake at 400 degrees for 10 min.  Reduce heat to 350 degrees and bake another 30 minutes.  Top with whipped topping, and eat while warm!

Core Exercises

A big buzzword in the fitness industry the last several years has been “core strength.”  The term CORE refers to the trunk (the thorax and abdomen).  Core strength is important because the trunk is the base from which the limbs work.  A weak core means a weak body, and while the vertebral column is created for mobility, it suffers if the supportive muscles are too weak to protect it from overuse.

Following are a group of exercises designed to strengthen the core:

Lying with knees bent, hold a playground ball between knees and rotate both knees to one side.  Keep your shoulders flat on the floor throughout the exercise.  Then rotate toward the other side. If you want to get the most out of it, cross your arms over your chest, and don’t use them to help push your body from side to side.  To make this one more challenging, try holding your hips just slightly off the floor as you rotate from side to side.

This is the beginning position for many of the exercises to follow.  Lie on your back with knees bent, and try to pull your belly button downward toward the floor.  Hold this position, but keep breathing with the upper abdominals. Hold 10 seconds, while breathing, then relax the muscles, and begin again!

The above are sequential exercises for abdominal strengthening.  Begin on your back with knees bent.  Next lift elbow to meet opposite knee.  Repeat to other side.  Do not use quick forceful movements, and do not hold your breath.  Work slowly, and repeat to each side a number of times until tired.    Do not do these exercises if they cause pain.

Try lying on your back as in the previous exercises and straightening one leg.  Keep the upper thigh in parallel with the other thigh.  Now, lift your hips off the table.  Hold for 5, then hips down, foot down, switch legs, and begin again!  Don’t forget to keep breathing!!

PLANKING!  or so it is called, means keeping your trunk stiff while supported at either end.  Now HOLD that!  For our purposes, keep breathing–lol!  After 30 seconds, relax, and then plank again!  Good luck~!
