G-Free Tabule’

Yes, I am aware that Tabule’ is wheat salad!  But, with a gluten-free member in our family, I needed to find some other alternatives.  So here is my Tabule’ made with quinoa:

4c cooked then cooled quinoa (according to package directions)

3 T lemon juice

1 1/2 T olive oil

2 lg tomatoes, chopped

4 sprigs fresh parsley

1/4-1/2 t black pepper

dash of garlic powder

Toss all together and let sit in refrigerator for 2 hours prior to serving.
